After selecting PF as the game system, and creating a new character, her handedness is not set. But in the resume Statistics, handed defaults to "right". On top of it the string used for this value is incorrect, it does not use the translation for handed|right (in_handRight) but general|right (in_right).
Some elements of the resume stat blocks are set to no value (move, vision), some others to "None" (alignment, race). It would make sense to have all of them, handed included, start at the same value.
The character defaults to right handed, hence the value displayed on the Statistics section. However the default was being set using the in_right value rather than in_handRight, as you have noted. This mean the drop-down would be unset, where it should be set to right handed and the statistics would show the wrong value.
On the None vs empty issue, The None text is used where a selection needs to be made. The blank is used for calculated values. In the case of vision in particular, standard vision is not shown, only special vision types, so None would be incorrect in that context.
